Slow Cooker Balsamic Pork Roast

Ingredients:

  • 3-4 pounds pork shoulder or pork loin roast
  • 1/2 cup balsamic vinegar
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup honey
  • 4 cloves garlic, minced
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 2 tablespoons cornstarch (optional, for thickening)

Instructions:

1. Preparing the Pork Roast:

  • Trim any excess fat from the pork roast, if desired, but leave some for flavor and moisture.
  • Season the pork roast generously with salt and black pepper on all sides.

2. Creating the Marinade:

  • In a small bowl, whisk together the balsamic vinegar, low-sodium soy sauce, honey, minced garlic, dried rosemary, dried thyme, and dried oregano until well combined.
