- 1 pound (450g) sirloin beef, thinly sliced
- 2 tablespoons (30ml) olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, peeled and sliced
- 2 celery stalks, sliced
- 1 potato, diced
- 4 cups (960ml) beef broth
- 1 cup (240ml) water
- 1 can (14.5 ounces / 410g) diced tomatoes
- 1 teaspoon (5ml) Worcestershire sauce
- 1 teaspoon (5ml) dried thyme
- 1 teaspoon (5ml) dried rosemary
- Salt and pepper, to taste
- Fresh parsley, chopped, for garnish

Step 1: Prepare the Beef
- Season the sirloin beef slices with salt and pepper on both sides.
- Heat olive oil in a large pot over medium-high heat.
- Add the beef slices to the pot and cook until browned on both sides, about 2-3 minutes per side. Remove the beef from the pot and set aside.
Step 2: Saute the Vegetables
- In the same pot, add diced onion and minced garlic. Cook until the onion is soft and translucent, about 3-4 minutes.
- Add the sliced carrots, celery, and diced potato to the pot. Cook for an additional 5 minutes, stirring occasionally.
