  • 2 tablespoons (30ml) olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 1 potato, diced
  • 4 cups (960ml) beef broth
  • 1 cup (240ml) water
  • 1 can (14.5 ounces / 410g) diced tomatoes
  • 1 teaspoon (5ml) Worcestershire sauce
  • 1 teaspoon (5ml) dried thyme
  • 1 teaspoon (5ml) dried rosemary
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish

Step 1: Prepare the Beef
  1. Season the sirloin beef slices with salt and pepper on both sides.
  2. Heat olive oil in a large pot over medium-high heat.
  3. Add the beef slices to the pot and cook until browned on both sides, about 2-3 minutes per side. Remove the beef from the pot and set aside.
Step 2: Saute the Vegetables
  1. In the same pot, add diced onion and minced garlic. Cook until the onion is soft and translucent, about 3-4 minutes.
  2. Add the sliced carrots, celery, and diced potato to the pot. Cook for an additional 5 minutes, stirring occasionally.
