Instructions
Step 1: Preparing the pancake batter
In a large bowl, mix together the flour, sugar, baking powder and salt.
In another bowl, whisk the eggs with the milk, melted butter and vanilla extract.
Pour the liquid mixture over the dry ingredients and mix gently until smooth. Do not overmix to prevent the pancakes from becoming dense.
Let the dough rest for 10 minutes to give the yeast time to act.
Step 2: Cooking the pancakes
Heat a non-stick skillet over medium heat and lightly grease it with a little butter.
Pour a small ladleful of batter into the hot pan to form a pancake about 10 cm in diameter.
Cook each crepe for 1 to 2 minutes on each side, until golden brown and nicely puffed.
Repeat until all the batter is used up. You should have about 10 to 12 pancakes.
Allow pancakes to cool completely before assembling into a cake.
Step 3: Preparing the vanilla mascarpone cream
In a bowl, whisk the very cold liquid cream until you obtain a firm texture.
In another bowl, mix the mascarpone with the vanilla extract and icing sugar.
Gently fold the whipped cream into the mascarpone using a spatula to obtain a light and creamy cream.
Step 4: Assembling the Pancake Cake
Place a crepe on a serving dish.
