Instructions for Making Chicken Madeira
Step 1: Prepare and Sear the Chicken
- Season the chicken breasts on both sides with salt and black pepper.
- In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts and cook for 5-6 minutes on each side, until they are golden brown and cooked through.
- Transfer the chicken to a plate and set aside.
Step 2: Sauté the Mushrooms
- In the same skillet, melt butter over medium heat.
- Add the sliced mushrooms and cook for 5 minutes or until they are tender and slightly golden.
- Remove the mushrooms from the skillet and set aside with the chicken.
Step 3: Make the Madeira Sauce
- Return the skillet to the heat and add the Madeira wine. Let it simmer for 2-3 minutes, scraping up any browned bits from the bottom of the pan for extra flavor.
- Pour in the chicken broth, heavy cream, garlic powder, and thyme. Stir well and let the sauce simmer for 5-7 minutes until it thickens slightly.
Step 4: Combine and Melt the Cheese
- Return the chicken and mushrooms to the skillet, spooning the sauce over the chicken to coat.
- If using mozzarella cheese, sprinkle it over the chicken breasts, cover the skillet, and let the cheese melt for 2-3 minutes.
Step 5: Serve
- Garnish the dish with fresh parsley or thyme if desired.
- Serve hot with your choice of side, like mashed potatoes or rice, to soak up the rich Madeira sauce.
