While these are known as Christmas cookies, I’ll be the first to admit I eat these year round because they are that good!
Instructions:
1. Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
2. In a large mixing bowl, cream together the softened butter, powdered sugar, and vanilla extract until smooth and creamy.
3. Gradually add the all-purpose flour and salt to the butter mixture, mixing until a dough forms.
4. Gently fold in the maraschino cherries and chocolate chips into the dough.
5. Roll the dough into a log and wrap with Saran wrap. Put in fridge for an hour. Then cut into rounds.
6. Bake cookies in the preheated oven for about 12-15 minutes or until the edges turn golden.
