The beauty of lentil soup is its understatement. While it isn’t fancy, I’d feed it to my dearest company (and I have many times!). Its satisfying, hearty texture and familiar, yet vibrant flavor will wrap you up with every bite.
This soup also earns bonus points for affordability. An entire pot of lentil soup costs about $10 to make, but it tastes like a million bucks. Plus, it’s freezer-friendly, making it ideal for meal prep.
Ingredients:
- 1 medium onion diced, about 1 1/2 cups
- 2 carrots sliced, about 1 1/4 cups
- 2 celery stalks diced, about 1 cup
- 1 medium white potato diced, about 1 1/2 cups
- 3 cloves garlic minced
- 28 ounce can diced tomatoes
- 1 1/2 cups dried brown lentils rinse
- 1 1/2 teaspoon Italian seasonings
- 1 teaspoon dried thyme
- 1 teaspoon lemon pepper
- 1/4 teaspoon ground black pepper
- 1 teaspoon salt
- 1 1/2 teaspoon lemon juice
- 1 Tablespoon balsamic vinegar
- 5 cups vegetable broth divided
- salt and pepper to taste
