Ingredients
For the Braised Beef:
1 lb beef shank, sliced into 4-5 inch pieces
3 slices ginger
1 tablespoon rock sugar (or regular sugar)
1 cinnamon stick
1 bay leaf
2 star anise
1 piece dried tangerine peel (optional)
3 cloves
1 teaspoon Sichuan peppercorns
1 teaspoon black or white peppercorns
4 cloves garlic, smashed
2 scallions, cut into sections
1/4 cup Shaoxing wine (Chinese rice wine)
1/4 cup light soy sauce
2 tablespoons dark soy sauce
4-5 cups water (or enough to cover the beef)
For the Assembly:
Store-bought or homemade scallion pancakes
Hoisin sauce
1 cucumber, julienned
2-3 scallions, julienned
Fresh cilantro (optional)
