Instructions

Step 1: Cook the Macaroni

  1. Boil Water: In a large pot, bring salted water to a boil.
  2. Cook Pasta: Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

Step 2: Prepare the Taco Meat

  1. Brown the Beef: In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  2. Add Seasoning: Stir in the taco seasoning and water. Simmer for 5 minutes, until the liquid has reduced and the beef is well-coated with seasoning.

Step 3: Make the Cheese Sauce

  1. Melt Butter: In a medium saucepan, melt the butter over medium heat.
  2. Add Flour: Whisk in the flour to form a roux, cooking for about 2 minutes until it’s slightly golden.
  3. Add Milk: Gradually whisk in the milk, continuing to whisk until the mixture thickens and bubbles.
  4. Add Cheese: Remove from heat and stir in the cheddar and Monterey Jack cheeses until completely melted and smooth.
  5. Season: Add salt and pepper to taste.
