Instructions:

1. Preparing the Taco Meat:

  • In a large skillet, cook the ground beef over medium heat until it is browned and crumbled.
  • Add the diced onion and minced garlic to the skillet, and cook until the onion is soft and translucent.
  • Stir in the taco seasoning, black beans, corn, diced tomatoes with green chilies, and tomato sauce. Simmer for 5-7 minutes, allowing the flavors to meld together.

2. Assembling the Taco Lasagna:

  • Preheat your oven to 375°F (190°C).
  • Spread a thin layer of the taco meat mixture in the bottom of a 9×13-inch baking dish.
  • Place a layer of cooked lasagna noodles on top of the meat mixture, overlapping slightly to cover the bottom of the dish.
  • Spread a layer of the taco meat mixture over the noodles, followed by a sprinkle of shredded cheese.
  • Repeat the layers until all of the taco meat mixture and noodles have been used, ending with a layer of shredded cheese on top.

3. Baking the Taco Lasagna:

  • Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  • Remove the foil and bake for an additional 5-10 minutes, or until the cheese is golden brown and the lasagna is heated through.
