Sweet Potato Honeybun Cake

For the Swirl:

1/2 cup brown sugar, packed
1 tablespoon ground cinnamon

For the Glaze:

1 cup powdered sugar
2-3 tablespoons milk
1 teaspoon vanilla extract

Instructions

Preheat the Oven:

Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking dish.

Prepare the Sweet Potato Puree:

If using fresh sweet potatoes, peel, chop, and boil them until tender. Drain and mash until smooth. Let it cool before using.

Make the Cake Batter:

In a large mixing bowl, combine the sweet potato puree, granulated sugar, brown sugar, vegetable oil, and eggs. Mix well until combined.
In another bowl, whisk together the flour, baking powder, baking soda, ground cinnamon, nutmeg, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the vanilla extract.

Create the Swirl:

In a small bowl, mix together the brown sugar and ground cinnamon for the swirl.
