Sticky Sweet Bacon Glazed Chicken

Ingredients:

For the Chicken:

  • 6 boneless, skinless chicken thighs
  • 6 slices bacon
  • Salt and pepper, to taste
  • 1 tablespoon olive oil

For the Glaze:

  • 1/4 cup honey
  • 2 tablespoons brown sugar
  • 2 tablespoons soy sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon black pepper

Directions:

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and set aside.
  2. Season the chicken thighs with salt and pepper to taste.
  3. In a large skillet, cook the bacon over medium heat until crispy. Remove the bacon from the skillet and drain on paper towels. Reserve the bacon fat in the skillet.
  4. In the same skillet with the bacon fat, heat the olive oil over medium-high heat. Add the seasoned chicken thighs to the skillet and cook for 3-4 minutes on each side, or until golden brown. Remove the chicken from the skillet and transfer to the prepared baking sheet.
  5. In a small bowl, whisk together the honey, brown sugar, soy sauce, Dijon mustard, garlic powder, smoked paprika, and black pepper to make the glaze.
  6. Brush the glaze over the chicken thighs, coating them evenly.
  7. Wrap each chicken thigh with a slice of cooked bacon, securing with toothpicks if needed.
  8. Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the bacon is crispy.
  9. Remove from the oven and let the chicken rest for a few minutes before serving.
