Spinach Quiche
Crust Ingredients:
~1 ¼ cups (150g) all-purpose flour
1 tsp salt
½ cup (115g) unsalted butter, cold and cubed
1 large egg
2-3 tbsp cold water
Filling Ingredients:
1 tbsp olive oil
1 small onion, finely chopped
2 cloves garlic, minced
5 cups fresh spinach, chopped
4 eggs
1 cup milk
1 cup shredded cheese (such as Gruyère or Swiss)
Salt and pepper, to taste
A pinch of nutmeg (optional)
