Ingredients:
- °3 slices Serrano ham, or prosciutto, or leftover diced ham
°1 onion, finely chopped - °1 C. tablespoon olive oil + 1 tbsp. butter
- °1 medium potato, diced
- °1 cup canned corn kernels
- °3/4 cup light coconut milk or milk, or unsweetened soy milk
- °1 cup chicken broth
- °1/4 tsp. thyme
- °1/8 tsp cayenne pepper
- °1 bay leaf
- °Light salt, the ham is already salty, the cheese too, ground pepper
- °Gourmet additions (optional)
- °2 slices of bread in small cubes, excellent cereal (French toast)
°1 C. butter
°30 g cheddar cheese, grated
