Prepare the Ribs:
Season the beef ribs generously with salt and pepper.
Make the Sauce:
In a bowl, mix together barbecue sauce, beef broth, brown sugar, apple cider vinegar, Worcestershire sauce, smoked paprika, garlic powder, onion powder, cayenne pepper (if using), and dried thyme or rosemary.
Slow Cook:
Place the seasoned ribs in the slow cooker. Pour the barbecue sauce mixture over the ribs, ensuring they are well coated.
Cover and cook on low for 7-8 hours or on high for 4-5 hours, until the ribs are tender and easily pull away from the bone.
Finish and Serve:
Carefully remove the ribs from the slow cooker. If desired, brush with additional barbecue sauce and broil in the oven for 3-5 minutes to caramelize the sauce.
Serve hot with extra barbecue sauce on the side.
