Thinly slice one large red onion; chop two large cucumbers; and cut three large tomatoes into wedges or slices.
Mix together 1/4 cup of olive oil with 1/4 cup of either red wine vinegar or apple cider vinegar. Add two tablespoons of sugar, if desired, for a somewhat sweet flavor.
Ingredients: salt, black pepper, dried oregano, basil, and, if desired, garlic powder (half a teaspoon).

Step 1: Prepare the veggies by slicing the cucumbers and onions thinly.
Make slashes or wedges with the tomatoes.
Step 2: Make the marinade— A small bowl should be used to whisk together the olive oil, red wine vinegar, sugar (if used), salt, pepper, dried oregano, dried basil, and garlic powder.
3. Incorporate and let marinate.
Combine the cucumbers, tomatoes, and onions in a big basin. Toss the veggies to coat them well after drizzling them with the marinade.
Put the bowl in the fridge for at least an hour to let the flavors to combine. The most effective marinating time is many hours or perhaps overnight.
Just before serving, give the mixture a little toss. Top with fresh parsley or basil if you want.
