Simple Nebraska Runza Recipe

Recipe: Simple Nebraska Runza

Ingredients:

For the Dough:

  • 4 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon salt
  • 2 1/4 teaspoons active dry yeast
  • 1 cup warm milk
  • 1/4 cup unsalted butter, melted
  • 2 large eggs

For the Filling:

  • 1 pound ground beef
  • 1 onion, diced
  • 3 cups shredded cabbage
  • Salt and pepper to taste

Directions:

  1. In a mixing bowl, combine the warm milk and yeast. Let it sit for 5 minutes, or until the yeast is foamy.
  2. In a separate bowl, whisk together the flour, sugar, and salt.
  3. Add the melted butter and eggs to the yeast mixture and whisk until well combined.
  4. Gradually add the flour mixture to the wet ingredients, stirring until a dough forms.
  5. Turn the dough out onto a floured surface and knead for 5-7 minutes, or until smooth and elastic. Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1 hour, or until doubled in size.
  6. While the dough is rising, prepare the filling. In a skillet, cook the ground beef and diced onion over medium heat until browned and cooked through. Add the shredded cabbage and cook for an additional 5 minutes, or until softened. Season with salt and pepper to taste.
  7. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  8. Punch down the risen dough and divide it into 12 equal portions. Roll each portion into a ball and then flatten it into an oval shape.
  9. Spoon a generous portion of the filling onto one half of each oval of dough, leaving a border around the edges. Fold the other half of the dough over the filling and press the edges to seal.
  10. Place the filled Runzas on the prepared baking sheet and bake in the preheated oven for 20-25 minutes, or until golden brown.
  11. Remove the Runzas from the oven and let them cool for a few minutes before serving.
