- Place the scrubbed and pierced potatoes directly on the oven rack or on a baking sheet.

3. Sauté the Vegetables and Sausage:
- In a large skillet or frying pan, heat the olive oil over medium heat.
- Add the sliced kielbasa sausage to the skillet and cook until browned on both sides, about 5-7 minutes.

- In the same skillet, add the sliced onion and baby carrots.
- Sauté the vegetables until they begin to soften, about 5 minutes.
