Step-by-Step Instructions

1. Cook the Rice:

  • In a medium saucepan, bring 2 cups of water to a boil.
  • Add the white rice to the boiling water and stir.
  • Reduce the heat to low, cover the saucepan, and simmer the rice for 18-20 minutes, or until it is tender and fluffy.
  • Once cooked, remove the rice from the heat and set it aside.

2. Prepare the Soup Base:

  • In a large pot, heat the olive oil over medium heat.
  • Add the chopped onion and minced garlic to the pot and sauté until softened and fragrant, about 5 minutes.
  • Add the sliced mushrooms, diced carrots, and diced celery to the pot, stirring to combine.
  • Cook the vegetables until they are softened, about 5-7 minutes.

3. Add the Broth and Seasonings:

  • Pour the vegetable or chicken broth into the pot, stirring well to combine with the vegetables.
  • Add the dried thyme and dried oregano to the pot, stirring to distribute the herbs evenly.
  • Season the soup with salt and freshly ground black pepper to taste.
