Instructions:
Preheat the oven to 180°C (350°F).
Peel and slice the potatoes thinly.
In a saucepan, melt the butter over medium heat.
Add the finely chopped onion and minced garlic, sauté until fragrant.
Stir in the heavy cream and bring to a simmer.
Layer half of the sliced potatoes in a baking dish.
Pour half of the cream mixture over the potatoes and sprinkle with half of the grated cheese.
Add the remaining potato slices on top and pour the rest of the cream mixture.
Season with salt and pepper, and top with the remaining cheese.
Cover with foil and bake for 45 minutes, then remove the foil and bake for another 15 minutes until golden brown.
Garnish with chopped fresh chives and serve hot.
