MOROCCAN COOKIES WITHOUT FLOUR AND OIL AND BUTTER

Preparation:
1. Starting with the almonds: Finely grind the almonds to achieve a flour-like texture.
2. Proceed with the dry ingredients: in a large bowl, combine almond flour, sugar, cinnamon, bitter cocoa and baking powder. Mix well to amalgamate all the ingredients.
3. Add eggs: in a second bowl, beat eggs slightly and then incorporate them into the mix of dry ingredients. Mix until you get a smooth and homogeneous dough.
4. Shaping cookies: take out portions of dough and shape them into small balls. Dip the balls in icing sugar and place a walnut in the center of each one.
5. Baking: Arrange the balls on a pan covered with baking paper and bake in a preheated oven at 180 degrees for about 15 minutes, or until the cookies are slightly golden brown.
