MINCE AND TATTIES

Instructions:

Cooking the Mince
  1. In a large skillet, heat some oil over medium heat.
  2. Add the minced beef and cook until browned, breaking it up with a spoon as it cooks.
  3. Add the chopped onion, minced garlic, and diced carrots to the skillet. Cook until the vegetables are softened.
  4. Stir in the tomato paste, beef broth, Worcestershire sauce, dried thyme, salt, and pepper.
  5. Simmer the mixture for about 20 minutes, allowing the flavors to meld together and the sauce to thicken.
Making the Tatties
  1. While the mince is simmering, place the diced potatoes in a pot of salted water.
  2. Bring the water to a boil and cook the potatoes until tender, about 15-20 minutes.
  3. Drain the potatoes and return them to the pot.
  4. Add the butter and milk to the pot.
  5. Mash the potatoes until smooth and creamy. Season with salt and pepper to taste.
Serving the Dish
  1. Divide the mashed tatties among serving plates.
  2. Top each serving with a generous portion of the cooked mince.
  3. Garnish with freshly chopped parsley, if desired.
  4. Serve hot and enjoy the comforting flavors of this classic Scottish dish!
