Mexican Street Corn

Instructions:

Preheat the oven to 350°F (176°C). Place the corn directly on the oven rack and bake for about 36-41 minutes, until tender.
While the corn is cooking, mix the garlic powder and mayonnaise in a small bowl.
Once the corn is cooked, brush it with the garlic mayonnaise, then roll it in the crumbled cotija cheese.
Sprinkle the corn with chopped cilantro and chili powder.
Squeeze fresh lime juice over the top, if desired.
