Spread the flaked coconut on a sheet of waxed paper. Divide the cooled mixture into two equal portions and shape each portion into a long roll.
Roll each log in the coconut, using the waxed paper to help roll them back and forth, as the mixture can be sticky.
Wrap each log in waxed paper, then wrap again in plastic wrap. Refrigerate overnight or longer.
When ready to serve, defrost the logs and cut them into slices about 1/3 inch thick. Enjoy!
