Make the Ricotta Mixture: In a bowl, mix together the ricotta cheese, grated Parmesan, and a pinch of Italian seasoning until well blended.
Assemble the Sandwiches: Butter one side of each slice of bread. On the unbuttered side of four slices, layer a spoonful of marinara sauce, a portion of the ricotta mixture, some cooked ground beef, and a handful of shredded mozzarella. Top with another slice of bread, buttered side facing out.
Grill the Sandwiches: Preheat a skillet or griddle over medium heat. Place the sandwiches in the skillet and cook for 3-4 minutes on each side, until the bread is golden brown and the cheese is melted.
Serve: Cut each sandwich in half and serve warm with additional marinara sauce for dipping.
