4 yellow onions, thinly sliced
2 tablespoons butter
1 tablespoon olive oil
1 teaspoon sugar
Salt and pepper to taste
1/2 cup beef broth
1/4 cup dry white wine
1 teaspoon fresh thyme leaves
For the Burgers:
1 1/2 pounds ground beef
Salt and pepper to taste
1 tablespoon Worcestershire sauce
4 slices Gruyere cheese
4 brioche buns
Mayonnaise (optional)
Fresh thyme for garnish
Instructions
1. Caramelize the Onions:
In a large skillet, heat the butter and olive oil over medium heat.
Add the sliced onions and sugar, stirring to coat the onions evenly.
Cook the onions for about 25-30 minutes, stirring occasionally until they are soft and deeply caramelized.
Season with salt and pepper, then add the beef broth, white wine, and thyme.
Simmer for an additional 5 minutes until the liquid is mostly absorbed and the onions are rich and flavorful. Set aside.
2. Prepare the Burgers:
In a mixing bowl, combine the ground beef with salt, pepper, and Worcestershire sauce.
Form the mixture into four equal patties.
Heat a grill or skillet over medium-high heat and cook the patties for about 4-5 minutes per side or until they reach your desired doneness.
During the last minute of cooking, place a slice of Gruyere cheese on each patty to melt.
3. Assemble the Burgers:
Toast the brioche buns lightly on the grill or in a skillet.
Spread a layer of mayonnaise on the bottom bun (optional).
Place the burger patty with melted cheese on the bottom bun.
Top with a generous portion of the caramelized onions.
Garnish with fresh thyme, cover with the top bun, and serve immediately.
