I bake these twice a month, Greek spinach pitta, my family loves it

First let the puff pastry thaw. Wash the spinach and blanch it in boiling salted water for four minutes, drain and roughly chop. Cut the spring onions into fine rings.
Now sauté the finely chopped garlic clove in the melted butter until translucent. Add the spinach and season. Dice the feta cheese. Whisk the eggs and mix into the spinach with the breadcrumbs and feta cheese. Season again if necessary.

Then preheat the oven to 200°C. Rinse a baking tray with cold water. Roll out the puff pastry very thinly and divide it into two parts, with one part (the lid) being a little smaller.
Place the larger part on the baking tray and spread the spinach filling on it so that a generous edge remains free.
Now fold the edges over the filling. Place the second half of the dough on the spinach and prick several holes with a fork. Brush the spinach cake with the egg yolk and bake in the oven for approx. 40 – 50 minutes until golden brown. Enjoy your meal
