For the Dough:
In a mixing bowl, combine 1 egg, teacup of oil, yogurt, water, salt, baking powder, and vinegar. Mix well.
Gradually add 4.5-5 cups of flour to the mixture, kneading until you have a smooth and elastic dough. Cover it with a clean cloth and let it rest for 30 minutes.
For the Filling:
Finely chop the dry onions.
In a pan, heat 3 tablespoons of oil and sauté the chopped onions until they turn translucent.
Add the ground beef and cook until it’s browned and cooked through.
Season the mixture with salt, black pepper, oregano, and ground red pepper according to your taste. Remove it from heat and let it cool.
Assembly:
Roll out the rested dough on a floured surface until it’s very thin, almost paper-thin.
Cut the dough into small squares, about 4×4 cm in size.
Place a small amount of the prepared beef filling in the center of each dough square.
Fold the dough over the filling to create a triangle or rectangle shape and press the edges to seal them tightly.
In a large pot of salted boiling water, cook the Manti until they float to the surface, usually for about 5-7 minutes. Remove them with a slotted spoon and place them in a serving dish.
For the Topping:
In a small bowl, whisk together 1 egg yolk and 1 tablespoon of milk.
To Serve:
Drizzle the egg yolk and milk mixture over the cooked Manti.
Optionally, you can top them with some melted butter or garlic yogurt sauce.
