Instructions for Making Hearty Lentil Bolognese
Step 1: Cook the Lentils
- Place the lentils in a pot with 3 cups of water. Bring to a boil, then reduce heat to a simmer.
- Let the lentils cook for 15–20 minutes or until they’re tender but still hold their shape. Drain and set aside.
Step 2: Sauté the Vegetables
- In a large pot or skillet, heat the olive oil over medium heat.
- Add the onion, carrots, celery, and bell pepper. Cook for 5–7 minutes until the vegetables are soft.
- Add the garlic and cook for an additional 1 minute, until fragrant.
Step 3: Add the Tomatoes and Seasoning
- Stir in the tomato paste, crushed tomatoes, and vegetable broth.
- Add the red wine (if using), oregano, basil, thyme, salt, and black pepper. Mix well to combine.
Step 4: Simmer the Sauce
- Bring the sauce to a simmer and let it cook for 20–25 minutes on low heat. Stir occasionally and add more broth if the sauce becomes too thick.
- Once the sauce has reduced and thickened, stir in the cooked lentils and adjust seasonings as needed. If you like a bit of heat, add the red pepper flakes.
Step 5: Serve
- Spoon the Bolognese over your favorite pasta, like spaghetti or penne, and sprinkle with fresh basil, parsley, or Vegan Parmesan cheese.
- Serve hot and enjoy!
