Hawaiian Chicken Tacos

For the Tacos:

  • 8 small flour tortillas
  • 1 cup fresh pineapple, diced
  • 1/2 red onion, finely chopped
  • 1 red bell pepper, diced
  • 1/4 cup fresh cilantro, chopped
  • 1 avocado, sliced
  • Lime wedges, for serving

For the Pineapple Salsa:

  • 1 cup fresh pineapple, diced
  • 1/2 red bell pepper, diced
  • 1/4 red onion, finely chopped
  • 1 jalapeño, seeded and finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper to taste

Step-by-Step Instructions

 

 

1. Marinating the Chicken

In a large bowl, combine the soy sauce, pineapple juice, brown sugar, minced garlic, grated ginger, sesame oil, and red pepper flakes. Mix well to ensure the sugar is dissolved. Place the chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over the chicken. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight, to allow the flavors to meld.

2. Preparing the Pineapple Salsa

While the chicken is marinating, prepare the pineapple salsa. In a medium bowl, combine the diced pineapple, red bell pepper, red onion, jalapeño, and cilantro. Squeeze the juice of one lime over the mixture and season with salt and pepper to taste. Mix well and refrigerate until ready to use.

 

 

3. Grilling the Chicken

Preheat your grill to medium-high heat. Remove the chicken from the marinade and discard any remaining marinade. Grill the chicken for 6-8 minutes per side, or until the internal temperature reaches 165°F (74°C) and the chicken is cooked through. Once cooked, remove the chicken from the grill and let it rest for 5 minutes before slicing it into thin strips.

4. Assembling the Tacos

Warm the flour tortillas on the grill or in a skillet over medium heat for about 30 seconds on each side, until they are soft and pliable. Place a few slices of grilled chicken in the center of each tortilla. Top with diced pineapple, red onion, red bell pepper, cilantro, and avocado slices. Add a spoonful of the prepared pineapple salsa on top.

 

 

5. Serving the Tacos

Serve the Hawaiian Chicken Tacos immediately with lime wedges on the side. Squeeze fresh lime juice over the tacos just before eating to enhance the flavors.
