Step 1: Prepare the Scalloped Potatoes
Preheat your oven to 375°F (190°C).
In a large bowl, combine the sliced potatoes, heavy cream, milk, minced garlic, salt, black pepper, and paprika. Mix well until the potatoes are evenly coated.
Grease a baking dish and layer half of the potato mixture in the bottom. Sprinkle half of the cheddar cheese over the potatoes.
Add the remaining potato mixture on top and finish with the remaining cheddar cheese and grated Parmesan.
Step 2: Bake the Potatoes
Cover the baking dish with aluminum foil and bake for 45 minutes.
Remove the foil and bake for an additional 15 minutes, or until the potatoes are tender and the cheese is bubbly and golden brown.
Step 3: Cook the Garlic Parmesan Pork Chops
While the potatoes are baking, heat the olive oil in a skillet over medium-high heat.
Season the pork chops with Italian seasoning, salt, and pepper. Add the minced garlic to the skillet and sauté for about 30 seconds.
Place the pork chops in the skillet and cook for about 4-5 minutes on each side, or until they are golden brown and cooked through.
Sprinkle the grated Parmesan cheese over the pork chops during the last minute of cooking, allowing it to melt.
Step 4: Serve
Once everything is cooked, plate the pork chops alongside a generous serving of cheesy scalloped potatoes.
Garnish with chopped fresh parsley for a pop of color and added flavor.
