Ingredients:
3-pound beef chuck roast
½ teaspoon salt
¼ teaspoon black pepper
1 teaspoon smoked paprika (optional)
4 whole garlic cloves
1 red onion, thinly sliced
1 cup Italian dressing
1 cup beer of choice
2 bay leaves
Hawaiian slider buns
Colby Jack cheese slices

Prepare the Slow Cooker: Place the 3-pound beef chuck roast in a 6-quart or larger slow cooker.
Season the Meat: Evenly season the roast with salt, black pepper, and smoked paprika (if using). Arrange the garlic cloves on top of the roast and scatter the sliced red onion over it.
Add Liquid Ingredients: Pour the Italian dressing and your preferred beer over the seasoned roast. Place the bay leaves on top.
Slow Cooking: Cover the slow cooker with its lid and cook the roast on high for 6 hours or on low for 8 to 10 hours. Resist the temptation to lift the lid during the cooking process to ensure even cooking.
