Ingredients:
- 4 medium potatoes, washed and thinly sliced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
- Optional toppings: shredded cheese, bacon bits, sour cream, green onions
Directions:
- Preheat your grill to medium-high heat or preheat your oven to 400°F (200°C).
- Tear off four large pieces of aluminum foil, each about 12 inches long.
- In a large bowl, toss the thinly sliced potatoes with olive oil, garlic powder, onion powder, dried thyme, salt, and pepper until evenly coated.
- Divide the seasoned potatoes evenly among the pieces of aluminum foil, placing them in the center of each foil sheet.
- Fold the sides of the foil over the potatoes to create a packet, folding and crimping the edges to seal tightly.
- If grilling, place the foil packets directly on the grill grates and cook for 20-25 minutes, or until the potatoes are tender, flipping halfway through.
- If baking, place the foil packets on a baking sheet and bake in the preheated oven for 25-30 minutes, or until the potatoes are tender.
- Once cooked, carefully open the foil packets and transfer the potatoes to a serving dish.
