Crockpot Creamy Sausage & Tortellini Soup

1. In a skillet, brown the Italian sausage over medium heat. Drain any excess fat.
2. Add the cooked sausage, diced onion, garlic, chicken broth, and diced tomatoes to the crockpot.
3. Stir in basil, oregano, salt, pepper, and red pepper flakes (if using). Cook on low for 6-7 hours or on high for 3-4 hours.
4. About 30 minutes before serving, add the refrigerated cheese tortellini, heavy cream, and chopped spinach. Stir and cover, allowing the tortellini to cook until tender.
5. Garnish with fresh parsley and grated Parmesan cheese before serving.
