Crispy Potato Balls Recipe
Directions
Make the potato mixture:
In a large bowl, combine the mashed potatoes, shredded cheese, green onions, crumbled bacon (if using), garlic powder, salt, and pepper. Mix until well combined.
Shape the balls:
Using your hands or a small scoop, shape the potato mixture into 1-inch balls. Place on a baking sheet and chill in the refrigerator for 15 to 20 minutes to help them hold their shape.
Set up the bread stations:
Place the flour in a shallow bowl, the beaten eggs in another bowl, and the bread crumbs in a third bowl.
Bread the potato balls:
Roll each potato ball in the flour, then dip it in the beaten eggs, and finally coat it in the breadcrumbs, pressing gently to adhere.
Fry the potato balls:
Heat oil in a pot or skillet to 350°F (175°C). Carefully lower a few potato balls into the hot oil and fry for 2 to 3 minutes, or until golden and crispy. Avoid overcrowding the pan.
Remove with a slotted spoon and drain on paper towels.
Serving:
Serve these crispy mashed potato balls warm, with your favorite dipping sauce, if desired, such as ranch, sour cream, or marinara.
