Copycat Pasta Fagioli Soup Recipe
Ingredients:
1 lb ground beef
1 small onion, diced
1 cup diced carrots
1 cup diced celery
2 cloves garlic, minced
2 cans diced tomatoes
1 can red kidney beans, drained
1 can white beans, drained
4 cups beef broth
1 cup pasta (ditalini or small shells)
1 tsp Italian seasoning
Salt and pepper to taste
Instructions:
In a large pot, brown ground beef and drain excess fat.
Add onion, carrots, celery, and garlic, cooking until tender.
Stir in tomatoes, beans, broth, and seasoning. Simmer for 20 minutes.
Add pasta and cook until tender, about 10 minutes.
Season with salt and pepper, then serve hot with grated Parmesan!
