Classic Shepherd’s Pie

Directions
Prepare the Mashed Potatoes:
In a large pot, add the cubed potatoes and cover with water. Bring to a boil over high heat and cook until the potatoes are tender, about 15-20 minutes.
Drain the potatoes and return them to the pot. Add the milk, butter, salt, and pepper. Mash until smooth and creamy. Set aside.
Prepare the Meat Filling:
Preheat your oven to 400°F (200°C).
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and carrots, and sauté until softened, about 5 minutes. Add the minced garlic and cook for another minute.
Add the ground lamb (or beef) to the skillet, breaking it up with a spoon. Cook until browned and no longer pink. Drain any excess fat.
Stir in the tomato paste, beef broth, Worcestershire sauce, and dried thyme. Add the frozen peas and corn. Season with salt and pepper to taste. Simmer the mixture for about 10 minutes, allowing the flavors to meld and the sauce to thicken slightly.
Assemble the Shepherd’s Pie:
Transfer the meat filling to a large baking dish, spreading it out evenly.
Spoon the mashed potatoes over the meat filling, spreading them out evenly. Use a fork to create a decorative pattern on top. If desired, sprinkle the shredded cheddar cheese over the potatoes.
Bake the Shepherd’s Pie:
Place the baking dish in the preheated oven and bake for about 20-25 minutes, or until the top is golden brown and the filling is bubbly.
Let the Shepherd’s Pie rest for a few minutes before serving.

Tips and Variations
Vegetable Variations: Feel free to add or substitute vegetables based on what you have on hand. Green beans, mushrooms, or bell peppers work wonderfully in this dish.
Cheese Topping: While cheddar cheese is optional, it adds a deliciously crispy and flavorful topping. You can also experiment with other cheeses like Parmesan or Gruyere.
Make-Ahead: Shepherd’s Pie can be made ahead of time and stored in the refrigerator for up to 2 days before baking. This makes it a great dish for meal prep or busy weeknights.
How to Store Leftovers
Store any leftover Shepherd’s Pie in an airtight container in the refrigerator for up to 3 days. To reheat, place the desired portion in an oven-safe dish and bake at 350°F (175°C) until heated through. You can also reheat individual servings in the microwave.

Food and Drink Pairings
Shepherd’s Pie pairs beautifully with a variety of sides and beverages. Serve it with a fresh green salad or roasted vegetables for a complete meal. For drinks, a robust red wine like Merlot or a hearty stout beer complements the rich flavors of the pie.
