Churrasco (Grilled Marinated Skirt Steak)

  • 2 pounds (900g) skirt steak
  • 1/4 cup (60ml) olive oil
  • 1/4 cup (60ml) soy sauce
  • 2 tablespoons (30ml) red wine vinegar
  • 4 cloves garlic, minced
  • 1 teaspoon (5g) ground cumin
  • 1 teaspoon (5g) paprika
  • 1 teaspoon (5g) dried oregano
  • Salt and freshly ground black pepper to taste
  • Chimichurri sauce (for serving)

Marinating the Skirt Steak

  1. In a bowl, whisk together olive oil, soy sauce, red wine vinegar, minced garlic, ground cumin, paprika, dried oregano, salt, and pepper until well combined.
  2. Place the skirt steak in a shallow dish or resealable plastic bag.
  3. Pour the marinade over the steak, ensuring it is evenly coated. Cover or seal the dish/bag and refrigerate for at least 2 hours, preferably overnight, to allow the flavors to penetrate the meat.
