Instructions

  1. Prepare the Chicken: Preheat your oven to 400°F (200°C). Season the chicken breasts with salt and pepper on both sides.
  2. Set Up Breading Stations: Place the flour in a shallow dish. In a separate dish, whisk the eggs. In a third dish, combine the breadcrumbs and grated Parmesan cheese.
  3. Bread the Chicken: Dredge each chicken breast in the flour, then dip in the beaten eggs, allowing any excess to drip off. Finally, coat the chicken in the breadcrumb mixture, pressing lightly to help the crumbs adhere.
  4. Fry the Chicken: In a large skillet, heat the vegetable oil over medium-high heat. Fry the breaded chicken breasts for 3-4 minutes per side, until golden brown and crispy. Transfer the chicken to a paper towel-lined plate to drain any excess oil.
  5. Assemble the Chicken Parmesan: Spread a thin layer of marinara sauce in the bottom of a baking dish. Place the fried chicken breasts on top of the sauce. Spoon additional marinara sauce over each piece of chicken, then sprinkle with mozzarella and provolone (if using).
  6. Bake: Transfer the baking dish to the oven and bake for 10-15 minutes, until the cheese is melted and bubbly, and the chicken is cooked through.
