Making the Mushroom Sauce
- In the same skillet, add the chopped onion and garlic. Cook until softened, about 3 minutes.
- Add the sliced mushrooms and cook until they release their juices and are golden brown, about 5 minutes.
- Sprinkle the flour over the mushrooms and stir to combine.
- Gradually pour in the chicken broth and heavy cream, stirring constantly.
- Simmer until the sauce thickens, about 5 minutes.
- Stir in the grated Parmesan cheese until melted and smooth.
Assembling the Gratin
- Arrange the cooked chicken breasts in a baking dish.
- Pour the mushroom sauce over the chicken, ensuring it is evenly distributed.
- In a small bowl, mix together the breadcrumbs and chopped parsley.
- Sprinkle the breadcrumb mixture over the top of the chicken and sauce.
Baking the Gratin
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the breadcrumbs are golden brown.
- Remove from the oven and let it rest for a few minutes before serving.
