These cheesy potato and onion tortilla wraps are a delicious and satisfying snack or appetizer. With a creamy potato filling and a crispy tortilla shell, they are sure to be a hit with the whole family.
Ingredients:
2 medium potatoes, peeled
1 teaspoon salt (for boiling potatoes)
10g butter or 1 teaspoon olive oil
140g chopped onion
1 chopped pepper
1/2 teaspoon paprika
1/4 teaspoon black pepper
2 pinches of salt
2 teaspoons water
2 teaspoons grated Parmesan cheese (20g)
Mozzarella cheese, shredded
Tomato pizza sauce
7 tortilla breads (15cm)
2-3 tablespoons vegetable oil (for frying)
Fresh or dried parsley, for garnish
Instructions:
Boil the Potatoes:
Place the peeled potatoes in a pot and cover with water.
Add 1 teaspoon of salt and bring to a boil.
Cook until the potatoes are tender. Drain and mash the potatoes while they are hot.

Prepare the Onion and Pepper Mixture:
In a skillet, heat the butter or olive oil over low heat.
Add the chopped onion and cook for about 3 minutes until it starts to soften.
Add the chopped pepper and cook for another 3 minutes.
Add the paprika, black pepper, and 2 pinches of salt. Stir well.
Add 2 teaspoons of water, cover the skillet, and cook for 5-7 minutes until the vegetables are tender.
