3. Assemble the Cookies:
Take about 1 tablespoon of cookie dough and flatten it into a disk.
Place a small spoonful of the cheesecake filling in the center.
Top with another tablespoon of dough and seal the edges, forming a ball around the cheesecake filling.
Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart.

Bake for 10-12 minutes, or until the edges are golden brown but the centers are still soft.
