Ingredients:
- 6 large eggs
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 teaspoon Cajun seasoning
- 1/4 teaspoon paprika
- Salt and black pepper to taste
- 6 medium shrimp, cooked and peeled
- Fresh chives, chopped, for garnish
- Smoked paprika, for garnish
Instructions:
Boiling the Eggs
- Boil the Eggs: Place the eggs in a saucepan and cover with cold water. Bring the water to a boil over medium-high heat.
- Simmer: Once the water reaches a boil, reduce the heat to low and let the eggs simmer for 10-12 minutes.
- Ice Bath: Remove the eggs from the saucepan and transfer them to an ice bath to cool for about 5 minutes.
Preparing the Filling
- Peel and Halve: Gently peel the cooled eggs and slice them in half lengthwise. Carefully remove the yolks and place them in a mixing bowl.
- Mash and Mix: Mash the egg yolks with a fork until smooth. Add mayonnaise, Dijon mustard, Cajun seasoning, paprika, salt, and black pepper to the bowl. Mix until well combined and creamy.
