Preheat your oven to 375°F (190°C).
Heat a tablespoon of olive oil in a large skillet over medium heat. Add the diced onion and minced garlic, sauté until softened and fragrant.
Add the ground beef to the skillet. Cook, breaking it apart with a spoon, until browned and cooked through.
Once the beef is cooked, add the shredded cabbage to the skillet. Cook, stirring occasionally, until the cabbage has wilted down, about 5-7 minutes.
Stir in the drained diced tomatoes, dried oregano, dried basil, salt, and pepper. Cook for another 2-3 minutes to allow the flavors to meld together.
Transfer the beef and cabbage mixture to a greased 9×13 inch baking dish.
Sprinkle the shredded cheddar cheese evenly over the top of the beef and cabbage mixture.
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
