Beef Stroganoff by Alain Ducasse

Preparation:
Cut the beef in strips and return it in a pan with olive oil and butter until golden brown. Get out the meat and reserve.
In the same pan, add chopped shallots and sliced mushrooms. Put back on medium heat until golden brown.
Add flour and mix well to coat veggies. Pour the calf bottom and let cut in half.
Infuse the liquid cream and mustard. Mix well and let simmer over low heat until the sauce is well-greasy.
Add beef strips to sauce and let cook for 5 mins. Salt and pepper to your liking.
