Instructions
Step 1: Prepare the Banana Pudding Filling
- In a small bowl, combine the mashed banana, vanilla pudding, powdered sugar, and vanilla extract. Mix until smooth and creamy.
- Set the filling aside, allowing the flavors to meld as you prepare the French toast mixture.
Step 2: Assemble the Stuffed French Toast
- Take each slice of thick bread and spread a generous amount of the banana pudding filling onto one side.
- Place another slice on top to create a “sandwich,” pressing gently to keep the filling in place. Repeat with the remaining slices until you have four filled French toast sandwiches.
Step 3: Prepare the French Toast Mixture
- In a shallow dish, whisk together the eggs, milk, ground cinnamon, nutmeg, and vanilla extract until well combined.
- Dip each sandwich into the egg mixture, coating both sides evenly. Allow the bread to soak briefly to absorb the flavors without becoming too soggy.
Step 4: Cook the French Toast
- Heat a large skillet or griddle over medium heat and add 1 tablespoon of butter.
- Once the butter has melted and is sizzling, place two of the stuffed French toast sandwiches in the skillet.
- Cook for 2-3 minutes on each side, or until golden brown and crisp. Press down gently with a spatula to ensure the filling heats through.
- Transfer the cooked French toast to a plate and cover to keep warm. Repeat with the remaining sandwiches, adding more butter to the skillet as needed.
