Banana Pudding Stuffed French Toast

For Topping (Optional)

  • Maple syrup
  • Powdered sugar
  • Fresh banana slices
  • Whipped cream

Instructions

Step 1: Prepare the Banana Pudding Filling

  1. In a small bowl, combine the mashed banana, vanilla pudding, powdered sugar, and vanilla extract. Mix until smooth and creamy.
  2. Set the filling aside, allowing the flavors to meld as you prepare the French toast mixture.

Step 2: Assemble the Stuffed French Toast

  1. Take each slice of thick bread and spread a generous amount of the banana pudding filling onto one side.
  2. Place another slice on top to create a “sandwich,” pressing gently to keep the filling in place. Repeat with the remaining slices until you have four filled French toast sandwiches.

Step 3: Prepare the French Toast Mixture

  1. In a shallow dish, whisk together the eggs, milk, ground cinnamon, nutmeg, and vanilla extract until well combined.
  2. Dip each sandwich into the egg mixture, coating both sides evenly. Allow the bread to soak briefly to absorb the flavors without becoming too soggy.

Step 4: Cook the French Toast

  1. Heat a large skillet or griddle over medium heat and add 1 tablespoon of butter.
  2. Once the butter has melted and is sizzling, place two of the stuffed French toast sandwiches in the skillet.
  3. Cook for 2-3 minutes on each side, or until golden brown and crisp. Press down gently with a spatula to ensure the filling heats through.
  4. Transfer the cooked French toast to a plate and cover to keep warm. Repeat with the remaining sandwiches, adding more butter to the skillet as needed.
