Ingredients:
For the Cake:
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup plain Greek yogurt
- 1/2 cup chopped walnuts or pistachios
For the Honey Syrup:
- 1/2 cup honey
- 1/2 cup granulated sugar
- 1/2 cup water
- 1 cinnamon stick
- 1 teaspoon lemon juice
Directions:
- Preheat your oven to 350°F (175°C). Grease and flour a bundt cake pan and set aside.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with the Greek yogurt, and mix until just combined.
- Fold in the chopped nuts until evenly distributed throughout the batter.
- Pour the batter into the prepared bundt cake pan and smooth the top with a spatula.
- Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- While the cake is baking, prepare the honey syrup. In a small saucepan, combine the honey, granulated sugar, water, cinnamon stick, and lemon juice. Bring to a boil over medium heat, then reduce the heat to low and simmer for 5 minutes. Remove from heat and let cool slightly.
- When the cake is done baking, remove it from the oven and let it cool in the pan for 10 minutes. Invert the cake onto a wire rack set over a baking sheet.
- Remove the cinnamon stick from the honey syrup, then slowly pour the syrup over the warm cake, allowing it to soak in and absorb the flavors.
- Let the cake cool completely before slicing and serving.
