Here’s a simple recipe for cod in a tomato lemon butter sauce:
Ingredients
- 4 cod fillets (about 6 oz each)
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 1 small onion, diced
- 2 garlic cloves, minced
- 1 can (14 oz) diced tomatoes, drained
- Juice of 1 lemon
- Zest of 1 lemon
- 4 tablespoons unsalted butter
- Fresh parsley, chopped (for garnish)
Instructions
- Prepare the Cod: Season the cod fillets with salt and pepper.
- Sear the Fish: In a large skillet, heat olive oil over medium-high heat. Add the cod fillets and cook for about 3-4 minutes on each side, until golden brown and cooked through. Remove from the skillet and set aside.
- Make the Sauce: In the same skillet, add the onion and cook until translucent, about 3-4 minutes. Stir in the garlic and cook for another minute until fragrant.
- Add Tomatoes: Add the diced tomatoes, lemon juice, and lemon zest. Stir to combine and simmer for about 5 minutes.
- Finish the Sauce: Reduce the heat to low and stir in the butter until melted and the sauce is smooth. Season with salt and pepper to taste.
- Combine: Return the cod fillets to the skillet, spooning the sauce over them. Cook for another 2 minutes to heat through.
- Serve: Garnish with fresh parsley and serve hot, preferably with crusty bread or over rice.
Enjoy your meal!
