Recipe: 8-Layer Casserole

Ingredients:

  • 1 pound ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup uncooked rice
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 can (8 ounces) tomato sauce
  • 1 cup frozen mixed vegetables
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Optional toppings: chopped fresh parsley, sliced green onions

Directions:

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with non-stick cooking spray.
  2. In a large skillet, cook the ground beef over medium heat until browned and no longer pink. Drain any excess grease from the skillet.
  3. Add the diced onion and minced garlic to the skillet with the ground beef. Cook for an additional 2-3 minutes, or until the onion is softened.
  4. Stir in the uncooked rice, diced tomatoes, tomato sauce, and frozen mixed vegetables. Season with salt and pepper to taste.
  5. Transfer the mixture to the prepared baking dish and spread it out evenly.
  6. Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes.
  7. Remove the foil from the baking dish and sprinkle the shredded cheddar cheese evenly over the top of the casserole.
  8. Return the casserole to the oven and bake, uncovered, for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  9. Remove the casserole from the oven and let it cool for a few minutes before serving.
  10. Garnish with chopped fresh parsley or sliced green onions, if desired, before serving.
