4 Ingredient ONLY Milk Pudding with Coconut

In a medium saucepan, whisk together the milk, sugar, and cornstarch until smooth and well combined.
Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens and begins to bubble. This should take about 5-7 minutes.
Once thickened, remove the saucepan from the heat and stir in the shredded coconut.
Pour the pudding into individual serving dishes or a large bowl. Let it cool slightly, then cover with plastic wrap, pressing it directly onto the surface to prevent a skin from forming.
Refrigerate for at least 2 hours, or until fully set. Serve chilled, optionally topped with extra shredded coconut or a sprinkle of cinnamon.
